LE MEURICE RETHINKS CUISINE IN A SUSTAINABLE WAY
In Paris, there are many luxury hotels and palaces, but few, like Le Meurice , receive an Écotable label , thus promoting more responsible and local cuisine.
This year, the restaurant of multi-starred chef Alain Ducasse and his executive chef Amaury Bouhours , located on rue de Rivoli, had the privilege of being awarded three stars by Écotable, rewarding research aimed at offering quality cuisine with products that respect the environment and animal welfare.

Écotable works in collaboration with restaurant owners to support them in their journey towards a more environmentally responsible approach. The company provides advice and tools to measure the environmental impact of establishments while also connecting them with ethical suppliers. Écotable's mission is to make this sector more sustainable, with the creation of a label to highlight these efforts.
In an interview with an eco-responsible label, Alain Ducasse explains that eating well doesn't necessarily cost more , because it's a conscious choice. We are free to eat what we want; however, we must keep in mind that there is always a cost to the planet, whether minor or significant. For example, eating less protein is less expensive. What comes at a high price is the care provided to individuals who are malnourished.

Waste recycling, plastic reduction, seasonal produce . This legendary establishment also offers a vegetarian menu and has earned the "sustainable meat" label for its choice of non-endangered fish species. But the Michelin-starred restaurant's eco-responsible initiatives don't stop there; it's now possible to take home leftovers: once frowned upon, the request for a doggy bag seems to be becoming the norm in luxury establishments.
Located in the heart of the French capital since 1835, this palace has hosted many illustrious names. But the most significant achievement for this Parisian institution in 2022 is the awarding of a prize to the research and collaboration between suppliers and the kitchen team, resulting in balanced and high-quality dishes for its guests. Here, Chef Amaury Bouhours and his 15 cooks seamlessly blend fine dining with responsible cuisine. In the adjacent dining room, guests, seated in a magical and historic space enhanced by designer Philippe Starck, are swept away by the flavors every weeknight.
