Among these establishments, grain[s] stands out as a benchmark, orchestrating a symphony where wine and intuitive cuisine reinvent the perfect pairing. Saint-Germain-des-Prés hasn't always been adept at distinguishing between old traditions and new wine revolutions, but grain[s], located on rue Mabillon, is doing so brilliantly. Behind this project is the Becs Parisiens collective, already responsible for renowned restaurants such as Le Christine, Colvert, and ChoCho. This new hybrid space, both a wine cellar and a bar/restaurant, is founded by a dynamic duo: Adrien Zunino and Henry Baldiviezo Caceres.
Behind the door, a first bright space gives way to a hushed and dimly lit basement, invisible from the street, where only about fifteen covers share a confidential and warm atmosphere.
Adrien Zunino has put together a dizzying selection of over 700 references of wines and craft beers, with a constant demand for quality and a definite taste for committed producers.
Henry Baldiviezo Caceres offers a seasonal menu, short but incisive, where each dish reveals a precise work on the product.

Otto 

Inspired by Japanese countertops, Otto is the project of Michelin-starred chef and MOF (Meilleur Ouvrier de France) Éric Trochon. If the inspiration of izakaya The Japanese influence is evident in the dishes, and the wine cellar plays a bold role with a selection that blends natural wines and artisanal sakes. The wine list, refined and eclectic, showcases unpretentious wines, favoring small, independent estates and committed winemakers. Here, food and wine pairing is an art form in itself, where carefully crafted natural wines are matched with precise and flavorful bites. All of this is enjoyed in a simple and intimate setting, where saffron velvet banquettes contrast with the understated beauty of raw wood.

The Market Counter 

In the bustling Saint-Germain district, L'Avant-Comptoir du Marché is a true institution. Here, there are no printed menus; everything hangs from the ceiling, inviting you to look up and trust in the moment. Wine is served by the glass, accompanied by tapas with distinctly French flair: meltingly tender Iberian ham, fish tartare with virgin olive oil, or crisp baby artichokes to dip in a flavorful anchovy sauce.

The Finder 

For natural wine and flavorful dishes, head to Le Dénicheur, just steps from Rue Saint-Denis. This gem of a shop, dedicated to small producers and natural wines, is run by Étienne Madelin and boasts over 200 wines with no added sulfites, with a selection that gives pride of place to both French and international vintages.
