Among these addresses, grain[s] sets the standard, orchestrating a symphony where wine and intuitive cuisine reinvent the perfect match. Saint-Germain-des-Prés hasn't always been able to distinguish old traditions from new wine revolutions, but grain[s], located on rue Mabillon, is doing just that. Behind the project is the Becs Parisiens troupe, already behind such renowned restaurants as Le Christine, Colvert and ChoCho. This new hybrid space, part wine cellar, part dining bar, is the brainchild of a dynamic duo: Adrien Zunino and Henry Baldiviezo Caceres.
Behind the door, an initial light-filled space gives way to a hushed, subdued basement, invisible from the street, where just 15 covers share a warm, confidential atmosphere.
Adrien Zunino puts together a dizzying selection of over 700 references of wines and craft beers, with a constant demand for quality and a taste for committed producers.
Henry Baldiviezo Caceres offers a short but incisive seasonal menu, where each dish reveals precision work on the product.

Otto 

Inspired by Japanese counters, Otto is the brainchild of Michelin-starred chef and MOF Éric Trochon. While the plates are inspired by Japanese izakayas, the cellar plays a bold role, with a selection of natural wines and artisanal sakes. The wine list is sharp and eclectic, showcasing unpretentious vintages from confidential estates and committed winemakers. Food and wine pairing is an art in its own right here, marrying chiselled natural keels with precise, tasty bites. All this is enjoyed in a sober, hushed setting, where saffron velvet banquettes contrast with the sobriety of rough wood.

L'Avant-Comptoir du Marché 

In the hustle and bustle of the Saint-Germain district, L'Avant-Comptoir du Marché is an institution. There are no printed menus here; everything hangs from the ceiling, like an invitation to look up and trust the moment. Wine is served by the string, accompanied by tapas with a French accent: melting Iberian ham, fish tartar with virgin oil, or crispy artichokes to dip in a flavorful anchoïade.

Le Dénicheur 

For natural wines and dishes full of character, head to Le Dénicheur, just off rue Saint-Denis, a nugget mosaic dedicated to small producers and natural bowling. Managed by Étienne Madelin, this confidential refuge offers over 200 references of wines without added sulfites, with a selection that gives pride of place to French and international vintages.

Bambino

Bambino is the address where wine is listened to as much as tasted. A hybrid of wine bar and discreet club, Bambino is as much a treat for the taste buds as it is for the ears. The selection of natural wines is carried out with brio, favoring lively, vibrant flasks, often from confidential micro-productions. Here, we alternate between natural classics and more original discoveries, with references from the most dynamic French and European vineyards. All this in an atmosphere where the vinyls spin continuously, mixing jazz, soul and electronic sounds.
