The bar, inspired by old train carriages, leads to a hidden room where the experience begins. Founder Ramzi Saade proposes a five-stage culinary journey, following the rhythm of the seasons. Dishes, served in semi-darkness, reveal fascinating flavors. My favorite: the fish in squid ink, with its iodized taste and charcoal color, in perfect harmony with the mysterious atmosphere of the place. The dessert, a chocolate mousse revisited with olive oil and meringue, surprises with its creaminess and saline note, completing the meal on a daring note. Each dish evokes the landscapes and spirit of the Basque Country. Atica offers a refined menu, ideal for lovers of fine dining ready to invest in an extraordinary experience.

Colère lives up to its name, offering bold, spicy cuisine, where each dish is a burst of flavor. After the success of Orgueil in the 11th arrondissement, Eloi Spinnler has set up his new restaurant in the 9th arrondissement. With its brick walls and industrial aesthetic, it perfectly embodies the raw yet refined spirit of his cuisine. The hushed ambience, with its warm tones of red, orange and yellow, evokes the flame and reinforces the unique character of the place. For starters, I sampled the red risotto, an interpretation of cacio e pepe revisited with a marinated egg yolk. Prepared with red beans and subtly spiced, the risotto transforms this classic into a dish as surprising as it is tasty. The vegetable tart with lemon cream was another wonderful discovery. Crunchy, fragrant and enhanced by seasonal vegetables, it combines freshness and texture. For dessert, the vanilla flan, sprinkled with a hint of Espelette pepper, balances sweetness and character with finesse. Colère is for gourmets ready to indulge in an exceptional culinary experience.

In an electric blue and red setting, the Oté restaurant is a true invitation to escape, where each specialty takes you to Reunion Island, with exotic flavors, fresh fish and fragrant spices. I first savored one of the house's signature dishes, bringelle, a stew of eggplant, tofu, coconut cream, turmeric, mango, lime, onions and chives. A spicy dish, combining sweet and savoury flavours. For dessert, I chose the artisanal coconut ice cream, an exquisite sweetness that literally transported me. The texture is creamy, the coconut flavor is enhanced by a coulis of fresh mango and a touch of lime, with dried lime powder adding a hint of acidity - and for extra pleasure, a "little pick-me-up" can accompany this dessert. At Oté, you'll enjoy refined, generous cuisine in an exotic setting, where the culinary journey is as accessible as it is authentic.

The signature dish, Bresse poultry in vinegar, embodies the perfect balance between refinement and authenticity. The incomparably tender bird is enhanced by a delicately balanced vinegar sauce, which adds a touch of acidity and depth, highlighting the exceptional quality of this local product. For the main course, the butternut millefeuille is distinguished by its elegant presentation and autumnal flavors. Thin layers of melting butternut, accompanied by a creamy sauce, offer a symphony of textures, between soft and crunchy, making this dish both comforting and sophisticated. Just a stone's throw from Montmartre, Dame is the hottest new address in the 9th arrondissement. The little sister of the Bonhomme restaurant, it offers generous cuisine, with shareable dishes perfect for groups. The decor, by Atelier Étude, draws its inspiration from the 1970s: warm hues, vinyl and retro touches combine to create a welcoming, stylish atmosphere. To start, I sampled a Greek-style fennel, delicately prepared. The fennel, melting and fragrant, is marinated in a light, lemony sauce, enhanced by fresh herbs that subtly spice up the flavors, offering a lovely freshness as a starter. For the main course, the line cod with beurre blanc was a real favorite. The cod, cooked to perfection, reveals tender, delicate flesh. The beurre blanc sauce, creamy and unctuous, enhances the finesse of the fish. The accompanying roasted potatoes are melt-in-the-mouth and lightly caramelized, adding a savory depth to the dish. As for the signature dish, saddle of lamb in three ways, it's a must-try specialty served for one, two or four guests, a perfect choice for those wishing to share a generous, gourmet culinary experience. Dame embodies authentic cuisine in a warm, well-kept setting, at a price that's just right for the atmosphere and flavors it offers.

For dessert, a vanilla panna cotta adds a sweet, creamy touch. Rori offers a friendly, accessible experience, where quality and simplicity meet.

In Saint-Ouen, Top Chef winner Mohamed Cheikh's first restaurant, Meïda, transports diners into a warm, bright atmosphere inspired by Mediterranean countries. The warm-toned decor evokes the colors of the Levant, creating a welcoming, immersive setting. I tried the tuna crudo with avocado cream and roasted peppers with turmeric-vinegared rice, a real invitation to travel. For dessert, the (puffed) rice with orange blossom milk provides a pleasant contrast of textures. Orange molasses lends a sweet, slightly acidic depth reminiscent of sunshine and the warmth of citrus fruit. Meïda offers a unique experience, combining the generosity and creativity of Mediterranean cuisine with French savoir-faire at an affordable price.

I tested the casarecce for you, a gourmet experience in which every bite combines simplicity and freshness. These twisted pastas, ideal for holding sauces, are imbued with the tangy sweetness of juicy, bright cherry tomatoes. Stracciatella, a creamy, delicate cheese, adds a refreshing creaminess and melts smoothly over the pasta. This dish delights with the balance between the acidity of the tomatoes and the milky richness of the stracciatella, offering a marriage of authentic, comforting flavors. At Adela's, the cuisine is inventive and generous, and the experience, while affordable, is refined, promising a moment of flavor and escape.

Drawing on his Mediterranean roots, chef Théo Badalucco offers a creative, instinctive cuisine that pays tribute to his Sicilian origins while adding a contemporary touch. For starters, I chose the scallops, perfectly cooked to reveal all their softness and finesse. They are sublimated by a light touch of citrus, bringing a delicate, bewitching freshness to every bite. For the main course, I was completely won over by the porcini risotto. This creamy, fragrant risotto with earthy porcini mushrooms is complemented by an herb sauce. The texture is perfectly balanced, both creamy and al dente. For dessert, the tiramisu revisited is a pure delight. Its light, airy consistency, with melt-in-the-mouth layers of mascarpone and coffee, is balanced by a touch of intense cocoa, evoking the authenticity of the Italian dessert while adding a sophisticated note. Stock offers a gourmet experience where authentic Mediterranean flavors are combined with elegant and creative presentation. The festive atmosphere and carefully crafted dishes are reflected in the note, matching the discreet luxury and meticulous detail of this culinary experience.
