We noticed him during the Top Chef season 12 show thanks to his original and colorful plates and his precise presentations like works of art.

Freed from this television constraint, the young prodigy Thomas Chisholm opened his restaurant Chocho to offer us bold and thoughtful signature cuisine in a warm setting: large wooden tables, open kitchen, fermentation jars of fruits and vegetables arranged on shelves that attract the eye of the diners.

Upon arrival, we opted for a seat at the counter, close to the chef's brigade, a lively and smiling team of passionate, focused, and relaxed young people. The menu was designed in the Catalan style and offered tapas-style dishes, a tribute to the sharing-oriented cuisine and a nod to the chef's origins.
We begin our culinary experience with two appetizers. The first, a vegetable dish—orange-glazed carrot with pistachio and sumac emulsion—is brilliantly prepared. The carrot, perfectly crisp on the outside and meltingly tender on the inside, is a comforting and almost nostalgic dish thanks to its combination of original and explosive flavors. The second, more briny—oysters poached in bacon fat with charcuterie vinegar and preserved lemon—impresses us with its delicacy and boldness. A true explosion of flavor, perfectly balanced, and the freshness of the lemon invigorates the palate.

We eagerly move on to the main courses, given the high standard of the dishes we have just enjoyed…
The first course arrived: confit potatoes with wild garlic sauce, straw potatoes, and trout roe, a dish that combined sweetness and character, power and generosity. Then came the second course, calf's liver with a modern parsley sauce, a true work of art. The meat was carefully concealed by a sort of vegetal and floral crumble that invited the palate to savor it. The calf's liver was cooked to perfection, its flavor bold and pronounced—a delight.
Finally, we finished with one of the three desserts on the menu, the Happy Hour, made with malt, beer and peanuts, an absolute favorite! Once again, bold but remarkable combinations, great art.
