DAWN: AN INSPIRING AND CREATIVE GASTRONOMIC EXPERIENCE

Inspired by the proximity of the Comédie-Française and the Théâtre du Palais-Royal, a unique concept is offered with lunch menus – after-show and tasting – with a choice of 5 to 8 courses.

Thibault Nizard, the 30-year-old chef, honed his skills in prestigious gastronomic restaurants such as Drouant, Le Taillevent and La Monnaie de Paris before opening, with his partner, his own restaurant, L'Aube, located in the heart of Paris between the Louvre and the Palais-Royal gardens.

In this 320 m² establishment spread over two levels, with its understated yet elegant décor, you are offered a complete immersion into the heart of the kitchen. And for those who are particularly curious, L'Aube suggests the "Chef's Table" for 6 guests. It's the perfect opportunity to enjoy a special moment with the chef in this open kitchen setting.

TRADITIONS WITH A MODERN UPDATE

« Trained as a sauce chef, I'm a cook by instinct. I love the classics, but I don't want to be bored. There has to be life on a plate, without forgetting what the customer expects. "The chef emphasizes poultry, fish, and homemade charcuterie." I go to Rungis several times a month to discover, taste, and share. The suppliers guide my menus and wine lists. »

For starters, the restaurant offers artichoke poivrade from Brittany, accompanied by a jus of roasted onions and mushrooms, or morels stuffed with poultry and vin jaune.

As for main courses, you can probably opt for the chicken quenelle with poulette sauce, which goes well with foie gras, green asparagus and Vin Jaune, or a grilled John Dory with peas, meadow mushrooms and fish stock with almond milk.
And to finish in style, desserts imagined instinctively and presented with talent, just like the main courses.
