One evening in July, when the streets are deserted by Parisians who have gone in search of wide open spaces, Cavalier, in the République district, presents itself as an obvious choice.
Having discovered this place somewhat by chance, we decided to go in, drawn by the warm and lively atmosphere emanating from this establishment. Inside, the room is long and narrow, like the popular pubs found in the north of the country and in Belgium.


The space, divided in two, is accentuated by terracotta paint on the bar side, where bottles are displayed on backlit shelves. On the restaurant side, the ambiance is softer, with beige walls and a space furnished with a few high tables and stools, all ready and waiting. Before ordering, we let ourselves be captivated by the precise movements of Léo Nicaud and Anthony Rostoucher, masters of the cocktails, as we order a Gin To' Cavalier accompanied by infused blackcurrant leaves. A deliciously refreshing experience!
For our main course, we opted for French corn ribs with Espelette pepper and marigold, as well as vitello tonnato, both prepared by Italian chef Michaël Aldibek. These dishes transported us to a Parisian summer night! The meal was paired with a Chardonnay from the Loire Valley, carefully selected by Prune Moirenc, the restaurant's sommelier.
To conclude this culinary journey, we end on a sweet note with a blackcurrant sorbet, pistachio cream, rhubarb, and verbena. A perfect and delicious ending that evokes memories of picking these little black berries in the family garden.
To prolong the moment, we decided to end our evening at the marble counter of this atypical, intimate and festive place.
It is important to know that at the end of the week and after 22:30 p.m., the atmosphere changes and the menu gives way to late-night plates filled with charcuterie from small producers, cheeses or seafood.
A place to visit without hesitation, even until the end of the night!
